I think the quote is getting at the pain of striving. If we're always striving for more we're suffering because we're discontent that we don't have what we want. Thus, gratitude or acceptance of the way things are knocks us out of that striving and allows us to be appreciative of what we have. However, I also think that breakups are often hard.. and it could be easy to say one's be grateful when one's really trying to avoid feeling the sadness of the breakup.

I think it means that she has learned to look at what she has in her life and is grateful for it. Then recognising that she has something to be grateful for is enough to help her find fulfilment.

I think it's kind of like, "If leaving you is this hard, and you're not even right for me, imagine how nice it will be when I find someone who is right for me. Thanks for teaching me that."
