I show my appreciation with a smile and huge heartfelt hug. And then, if deemed necessary, I acknowledge the person by letting him or her know with clear, direct communication how much the act of kindness given to me, meant to me.

ie. my mom did something nice for me lately, so i took her out for lunch and a few drinks.
My girlfriend was there for me on a bad day, so I made her day by surprising her at work with four pounds of chocolate and coffee (seriously...four pounds of chocolate really do go a long way, she's still working on it)
My best friends have been there for me during the roughest times, so in turn, I drive their drunk asses home and listen to them

Spend a bit of extra time with them. Actually look at them, and smile. Support who they are (no matter how imperfect) and where they currently are without trying to judge or 'categorize' them.

Let them be who they are going to be -- and let them know how much you appreciate them being who they are.
And don't be too prideful to accept a compliment or a gift back if they really feel like it's something they need to do. Try to avoid the close-ended "You don't need to do that". Leave it open by adding, "But it's appreciated".

As for your mom, something sweet like a post it on the fridge or on your mom's mirror. Flowers always do the trick.
I personally love giving hugs, thank you notes, a nice illustration and quote via picture mail, and sweets.
