Life.
As in the Disney example pictured above, Merlin didn't really teach Arthur any specific topic or subject. He simply created and oversaw the scenarios in which the lad could learn about life: ever ready to end the lesson when it threatened to end Arthur's life so any learning-to-date was rendered moot.
The best teachers don't ram information down one's throat but rather create the learning scenarios; stand by, direct, support as the student basically undergoes their own process of learning.
But regrettably this is something that doesn't happen as often as it should in standarized schooling. There are quotas and standards and grades and timetables to be satisfied; so force-feeding becomes the norm. And the result would seem to be generations that are so intellectually fat that they just sit back and wait to be told what is and what is OK to do and think and pursue rather than to use their own intellectual legs and lungs to run the race for themselves.
Life as a spectator sport!

At any rate I can't think of anything that I know (as an entire subject) that would be worth teaching.
However, if I could know any subject really well, and was a professor of that topic, and had a desirable number of young minds ready to learn, I would teach about life.
You might not think that's a topic, but I think it would be the best topic to teach if I knew it all.
My classroom would be in a huge castle in the highlands of Scotland (away from distractions). Though we would make a lot of "excursions" around the world :)

I would teach video editing or cinematography. Possibly film from analytical perspective.

How to please a woman in bed. You'd be surprised at the number of men who don't have a clue when it comes to pleasing or even meeting the desires of a woman.

Darkness only has a negative condintation to those who believe they are enlightened. It in no way means evil.
