Scripture says that God said, "I am that I am." He doesn't need us to represent Him to be anyone.

There are myriad representations of god/gods/goddesses, so, which one(s) are you referring to here?

Anytime we are attempting to 'represent God,' I think it ceases to be God that we are representing.

any concept of god i can formulate doesn't involve god being a He or even a who

are you kidding? God is beyond description. we use words like love, goodness, mercy, but they are ultimately inadequate. even the best analogy anyone might voice would be incomplete and insufficient. we do our best to represent Him honestly as we understand, but always recognizing that He is oh so much more.
